Ingredients

For 3 tacos, we’ll need:
- Corn taco shells: 3 pre-formed pieces
- Ripe avocado: 1
- Tomatoes: 2 medium
- Onion: ½ medium (sliced thinly)
- Mushrooms: 2 medium (sliced)
- Bitter greens: 1 handful
- Chicken meat: 200g (cut into thin strips)
- Lemon: ½ (for juice)
- Olive oil: 2 tablespoons
- Soy sauce: 1 tablespoon
- Mexican hot sauce: 1–2 teaspoons (adjust to taste)
- Yellow mustard: 1 teaspoon
- Freshly ground black pepper: ¼ teaspoon
- Rose sea salt: ¼ teaspoon
Optional: extra herbs like cilantro for garnish.

Step 1: Make the Avocado Sauce

1. Cut the avocado in half, remove the pit, and scoop the flesh into a medium bowl.
2. Mash the avocado until smooth using a fork or small whisk.
3. Dice 1 tomato finely and chop a small handful of fresh herbs. Add them to the mashed avocado.
4. Season with ¼ teaspoon of rose sea salt, ¼ teaspoon of black pepper, and drizzle 1 teaspoon of olive oil.
5. Squeeze in ½ lemon’s juice and mix everything until creamy. Set aside. This sauce will add creaminess and freshness to our tacos.

Step 2: Marinate the Chicken

1. Place the chicken strips in a small bowl.

2. Place the pre-formed corn taco shells on a baking tray.
3. Bake for 5–6 minutes until slightly crispy and shiny. Avoid overbaking, which makes them hard.
4. Alternatively, lightly fry them in 1 teaspoon of olive oil for extra crunch.

Step 5: Assemble the Tacos

1. Place a layer of bitter greens into each taco shell.
2. Spoon 1–2 tablespoons of the prepared avocado sauce into each shell.
3. Add cooked chicken, sautéed mushrooms, and onions evenly among the tacos.
4. Dice the remaining tomato and sprinkle on top for freshness.
5. Drizzle with ½–1 teaspoon of Mexican hot sauce per taco and a little yellow mustard. Adjust according to taste.
6. Optional: garnish with fresh herbs like cilantro for extra flavor.
